Strawberries are beloved for their vivid cherry red color and sweet, tart flavor. Although available year round, freshest pickings occur during season. When purchasing strawberries, select plump, firm berries with no soft spots, bruising, or mildew.
Streusel topping is made with flour, granulated sugar, and melted butter that has been mixed until large clumps form. It can be sprinkled on top of muffins, cakes, crisps & cobblers for an added crunch and flavor boost. Feel free to add chopped nuts or other ingredients as desired for extra crunch!
Making streusel is easy: just use either room temperature or cold butter (see below). After mixing until crumbly and with the consistency of cornmeal, use either a pastry cutter or your fingers to rub butter into flour mixture.
Streusel should be stored at its freshest in an airtight container in the refrigerator. Leftover streusel will stay fresh up to one week.
For an easy dessert, layer strawberry sauce, cake and pastry cream in a trifle bowl or individual glass cups with sliced strawberries before topping it off with whipped cream. You can serve this immediately or store in the refrigerator until ready to assemble.

Buttery Cinnamon Sugar Streusel Topping
Streusel is an iconic topping that can take any muffin, quick bread, fruit crisp or coffee cake to the next level. Made of flour, sugar and butter, it adds an irresistible layer of flavor to whatever baked good you choose.
Making streusel is a relatively straightforward recipe, but it takes some patience to form the desired clump size. Begin by mixing all dry ingredients together in a large bowl.
Once all your ingredients are prepped, it’s time to add the butter. It can be room temperature, cold or melted; whatever temperature it is, make sure there is enough butter so that it forms those desired crumbs.
Butter gives streusel its signature texture. Just be sure the butter is at least softened by being at room temperature so that it won’t solidify into clumps when mixing for your recipe.
Cut the butter into sugar and flour until it resembles coarse sand-sized crumbs. Once formed into clumps, you can either press them together with your fingers or use a pastry cutter for convenience.
Once the streusel has formed, you can store it in either a small container or even the freezer until you’re ready to sprinkle over muffins, quick breads, fruit crisps, coffee cakes, or pies. Not only does this taste delicious on most baked goods, but peach pie is especially delicious when topped off.
This streusel topping is so simple to make: just four ingredients! Brown sugar, granulated sugar, melted butter, and flour. If desired, add cinnamon for extra flavor!
This gluten-free streusel recipe can also be made vegan by replacing the butter with non-dairy margarine and gluten free baking blend in place of flour. For an even more complex flavor, you may add in extra sugars or dry ingredients like oatmeal, coconut, or chopped nuts to the mixture for added complexity.
Soft and Fluffy Coffee Cake
Coffee cakes are a classic breakfast favorite that can be sweet or savory depending on the sugar and spices used in the recipe. They can be adorned with various toppings like cream cheese or whipped cream for an extra special touch, and pair perfectly with hot coffee or tea for added enjoyment.
This Strawberry Streusel Coffee Cake incorporates fresh strawberries into the batter and tops it off with a brown sugar cinnamon streusel topping. This streusel is made with butter that has been cooked in the oven, then combined with flour, brown sugar, cinnamon, and salt for flavor.
To make the streusel, whisk together flour, sugar, cinnamon and salt in a medium bowl until well mixed. Next add the cooled, melted butter and mix until crumbly. This streusel can be made ahead of time as it keeps well in the refrigerator for up to three days.
Once the streusel is ready, transfer it to a small baking pan and set aside until you can bake the coffee cake. Pour the batter on top of the streusel and bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
