Some cooks add salt because they believe it will prevent cracked eggs or make shells easier to remove. Neither claim is dependable. Salt may affect proteins escaping from an existing crack, but vinegar is more effective for that purpose. Peeling depends more strongly on the bond between the cooked white, shell membranes, and shell.
Salt is harmless in the pot, but it is usually unnecessary.
How Vinegar for Boiled Eggs Affects Cracks

Household vinegar contains acetic acid, usually at a concentration of about 5 percent. Adding a small amount to cooking water makes the water mildly acidic. If an eggshell breaks, that acidity causes the exposed egg white to set near the opening instead of spreading into long strands.
Vinegar does not repair a crack. It can only reduce leakage after the shell has broken.
Eggshells consist largely of calcium carbonate, which reacts with acid. Long exposure to vinegar can soften or dissolve a shell. The diluted vinegar and short cooking time used for boiled eggs generally produce little visible effect, though large quantities may leave the shell surface slightly rough. A cracked egg may also acquire a faint vinegar flavor.
For damage control, add about 1 tablespoon (15 milliliters) of vinegar per quart (1 liter) of water. More is rarely useful.
Salt and Vinegar Do Not Guarantee Easy Peel Eggs
Freshness has a stronger influence on peeling than either additive. Fresh egg whites have a lower pH and tend to adhere firmly to the inner shell membrane. During storage, carbon dioxide gradually escapes through the shell, the pH rises, and the cooked white usually separates from the membrane more readily.
Eggs that have been refrigerated for approximately one to two weeks often peel more cleanly than eggs collected or purchased very recently. Storage conditions and individual eggs still produce variation.
A hot-water start can also improve peeling. Lowering eggs into already boiling or steaming water sets the outer portion of the white quickly, which may reduce adhesion to the membrane. The trade-off is a greater risk of cracking if cold eggs are dropped into the pot or exposed to violent boiling.
An ice-water bath stops residual cooking and firms the cooked egg. Cooling may also help the egg contract slightly inside the shell, although it cannot correct strong membrane adhesion in a very fresh egg.
A Reliable Method for Hard-Boiled Eggs
These egg boiling tips address the factors that salt and vinegar cannot control:
- Bring enough water to cover the eggs by about 1 inch (2.5 centimeters) to a boil.
- Lower refrigerated eggs into the water with a spoon or small strainer. Do not drop them.
- Reduce the heat enough to maintain a gentle boil. Vigorous movement can knock eggs against the pan.
- Cook large eggs for about 10 to 12 minutes for fully set yolks. Egg size, starting temperature, and altitude may require minor adjustments.
- Transfer the eggs directly to ice water for at least 5 minutes.
- Crack the shell all over, then peel under cool running water or in a bowl of water.
At higher elevations, water boils at a lower temperature, so cooking may take longer. Adding salt will not compensate for that difference.
For jammy yolks, use a shorter cooking period, generally about 7 to 9 minutes, depending on egg size and preferred texture.
How to Prevent Cracked Eggs

Temperature shock and physical impact cause most cracks. A small existing fracture may also expand as the egg heats and its contents press against the shell.
Several practical measures reduce breakage:
- Inspect eggs for hairline cracks before cooking.
- Use a spoon to lower each egg into the water.
- Choose a pot that holds the eggs in one layer without crowding.
- Keep the water at a gentle boil rather than a violent one.
- Avoid stacking eggs or stirring them forcefully.
Allowing refrigerated eggs to warm briefly can reduce temperature shock, but eggs should not remain at room temperature for extended periods. Under U.S. food-safety guidance, cooked or raw eggs should not stay unrefrigerated for more than two hours, or more than one hour when the ambient temperature exceeds 90°F (32°C).
Choosing Between Plain Water, Salt, and Vinegar
Plain water works for most batches. Add vinegar when cracked shells are a recurring problem or when cooking an egg that has a tiny fracture and will be eaten immediately. Discard eggs with large cracks discovered before cooking, especially if their storage history is uncertain.
Using both salt and vinegar is possible, but the combination provides no established advantage for producing perfect hard-boiled eggs. Cooking eggs with vinegar is chiefly a way to control leaking white. Salt belongs on the peeled egg, where it can actually season the food.
Refrigerate cooked eggs within two hours and use them within one week. Keep unpeeled eggs in a covered container to limit odor transfer and moisture loss.
