Neither step guarantees a clean peel. Eggs several days old usually peel more predictably than eggs collected very recently. Peeling under a thin stream of water can remove shell fragments without tearing the white.

Published cooking charts often disagree because their conditions differ. A seven-minute egg prepared at sea level in a small saucepan may not match one cooked at 5,000 feet (1,524 meters) in a crowded pot.
