Ingredients:

  • 1 pound of ground beef
  • ½ cup chopped onion
  • 1 cup red bell pepper
  • 1 cup medium grain rice
  • 1 cup milk
  • 14 oz canned tomatoes
  • 10 oz canned corn
  • 2 oz olive mix
  • 4 slices of smoked bacon
  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • ½ tsp salt
  • ¼ tsp ground pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 bunch of parsley
  • 8 oz cheddar cheese

Bread croutons

  • 5 slices of bread
  • 1 tbsp olive oil
  • ½ tbsp oregano
  • ¼ tsp salt
  • ¼ tsp ground pepper

Preparation Directions

  • Cut the slices of bread into cubes and mix them with olive oil, salt, pepper, and oregano. Bake them in the oven for 5 minutes at 350 °F
  • Boil the rice in salted water for 10 minutes, then strain it
  • Finely chop the onion and parsley. Cut the bacon and red bell pepper into cubes
  • Brown the bacon in a pan with olive oil for 5 minutes, then add the onion, and red bell pepper and cook for another 5 minutes
  • Add the ground beef and continue cooking for 5 minutes until the meat is no longer pink, then add the milk and cook on low heat until the milk evaporates (about 5 minutes)
  • Add salt, garlic powder, chili, canned tomatoes, olives, and canned corn. Mix and cook for 5 minutes
  • Add the cooked rice, chopped parsley, butter, ground pepper, and 1/4 of the croutons. Mix and take the pan off the heat
  • Put the composition in a tray, put the croutons on top and finally add the grated cheddar
  • Bake in the oven for 20 minutes at 360 °F
