Grandma’s Rice Dish casserole can feed a crowd and can be frozen for later meals.
Ingredients:
- 1 pound of ground beef
- ½ cup chopped onion
- 1 cup red bell pepper
- 1 cup medium grain rice
- 1 cup milk
- 14 oz canned tomatoes
- 10 oz canned corn
- 2 oz olive mix
- 4 slices of smoked bacon
- 1 tbsp chili powder
- 1 tbsp garlic powder
- ½ tsp salt
- ¼ tsp ground pepper
- 1 tbsp olive oil
- 1 tbsp butter
- 1 bunch of parsley
- 8 oz cheddar cheese
Bread croutons
- 5 slices of bread
- 1 tbsp olive oil
- ½ tbsp oregano
- ¼ tsp salt
- ¼ tsp ground pepper
Preparation Directions
- Cut the slices of bread into cubes and mix them with olive oil, salt, pepper, and oregano. Bake them in the oven for 5 minutes at 350 °F
- Boil the rice in salted water for 10 minutes, then strain it
- Finely chop the onion and parsley. Cut the bacon and red bell pepper into cubes
- Brown the bacon in a pan with olive oil for 5 minutes, then add the onion, and red bell pepper and cook for another 5 minutes
- Add the ground beef and continue cooking for 5 minutes until the meat is no longer pink, then add the milk and cook on low heat until the milk evaporates (about 5 minutes)
- Add salt, garlic powder, chili, canned tomatoes, olives, and canned corn. Mix and cook for 5 minutes
- Add the cooked rice, chopped parsley, butter, ground pepper, and 1/4 of the croutons. Mix and take the pan off the heat
- Put the composition in a tray, put the croutons on top and finally add the grated cheddar
- Bake in the oven for 20 minutes at 360 °F
